やがてトレーナーの社員が現れ、全員に制服が配られた。制服に袖を通し、服装チェックのポスターに従って身なりを整えた。髪が長い女性は縛り、時計やアクセサリー外して例えると、さっきまでバラバラだった私たちが、急に「店員」らしくなった。
一番最初に練習したのは表情と挨拶だった。我顔のポスターを見ながら、その通りに口角をあげ、背筋を伸ばし、横に並んで一人ずつ「いらっしゃいませ！」と言わされた。トレーナーの男性社員が、一人でずつチェックしていき、声が小さかったり表情がぎこちない場所は「はい、もう一度！」と指定が飛ぶ。
「岡本さん、恥ずかしがらないでもっとにっこり！相崎くん、もっと声出して！はいもう一度！早倉さん、いいねいいね！そうそう、その元気！」
私はバックルームで見せられた見本のビデオや、トレーナーの見せてくれるお手本の真似をするのが得意だった。今まで、誰も私に、「これが普通の表情で、声の出し方だよ」と教えてくれたことはなかった。
オープンまでの二週間、二人組になったり、社員を相手にしながら、架空の客(P21)に向かって、ひたすら練習が憂いた「お客様」の目を見て微笑んで一礼すること、生理用品は紙袋に入れること、温かいものは冷たいものと分けて入れること、ファーストフードを頼まれたらてをアルコールで消毒すること。
